  1. Prepare quinoa according to package instructions.
  2. Toss cooled quinoa with corn, tomatoes and juice, shallots, herbs, lime juice and passion, olive oil, and salt.
  3. The mix will hold up quite well for a couple of hours in the refrigerator (or perhaps for a day or 2, if you do not mind that it will look a little less perky). Wait to toss in your avocado and cheese right before serving for ideal freshness, and if it’s been sitting for a while, provide it another salt/ oil/ lime juice treatment to wake all of it up.
