  • 1 teaspoon honey or maple syrup
  • 1/2 teaspoon salt, more to taste
  • Newly ground black pepper, to taste
  • Pinch of red pepper flakes, for heat (optional)


  1. In a big serving bowl, integrate the sliced lettuce, tomatoes, cucumber, pepper, onion, parsley, olives and feta. Toss the components together and reserved.
  2. To prepare the vinaigrette, integrate all of the components in a liquid measuring cup and blend till combined. Taste, and include more vinegar if you ‘d like a more tasty dressing, or more honey for a more tame dressing.
